Irish Potatoes Casserole

Ingredients

– 2 lbs of potatoes, peeled and sliced into 1/4-inch rounds
– 1 cup of shredded sharp cheddar cheese
– 1/2 cup of milk (feel free to use a non-dairy alternative!)
– 1/4 cup of unsalted butter
– 1/2 cup of sour cream (low-fat works too!)
– 1/3 cup of sliced green onions
– 1 tsp of salt
– 1/2 tsp of black pepper
– Cooking spray for the baking dish

Preparation

1. Start off by preheating your oven to 350°F (175°C), and then grab a 9×13 inch baking dish and give it a good coat with cooking spray.

2. Now, let’s parboil those potatoes – pop them in a large pot of boiling water for about 5 minutes. You want them to be just tender. Drain and set aside to cool a smidge.
