Vegetable Patties

Ingredients

– 2 large potatoes, boiled and mashed
– 1 cup mixed vegetables (such as peas, carrots, corn, and bell peppers), finely chopped
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 teaspoon ginger, minced
– 1 green chili, finely chopped (optional)
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder (optional)
– Salt to taste
– 1/4 cup fresh cilantro, finely chopped
– 1/4 cup bread crumbs (plus extra for coating)
– 2 tablespoons all-purpose flour
– Oil for frying

Preparation

1. **Prepare the vegetables:**
– Boil the mixed vegetables until tender, then drain and set aside.
– In a large bowl, combine the mashed potatoes with the mixed vegetables, onion, garlic, ginger, green chili (if using), cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to combine.

2. **Form the patties:**
– Add the chopped cilantro, bread crumbs, and flour to the vegetable mixture. Mix well until everything is well incorporated.
– Take a small portion of the mixture and shape it into a patty. Repeat with the remaining mixture to form more patties.

3. **Coat the patties:**
– Spread some bread crumbs on a plate. Lightly press each patty into the bread crumbs to coat both sides.

4. **Fry the patties:**
– Heat oil in a skillet over medium heat. Once the oil is hot, add the patties in batches, making sure not to overcrowd the skillet.
– Fry the patties until golden brown and crispy on both sides, about 3-4 minutes per side. Remove from the skillet and drain on paper towels.

5. **Serve:**
– Serve the vegetable patties hot with your favorite dipping sauce or chutney.
