Savory Zucchini Pancakes

Ingredients

– 2 medium zucchinis, grated
– 1 teaspoon salt
– 1/2 cup all-purpose flour
– 1/4 cup grated Parmesan cheese
– 2 large eggs
– 2 green onions, finely chopped
– 2 cloves garlic, minced
– 1/4 teaspoon black pepper
– 1/4 teaspoon paprika
– 1/4 teaspoon baking powder
– 2 tablespoons olive oil or vegetable oil (for frying)

Preparation

1. **Prepare the Zucchini:**
– Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture.
– After 10 minutes, squeeze out as much liquid as possible from the zucchini using a clean kitchen towel or paper towels.

2. **Make the Batter:**
– In a large bowl, combine the grated zucchini, flour, Parmesan cheese, eggs, green onions, garlic, black pepper, paprika, and baking powder. Mix until well combined.

3. **Fry the Pancakes:**
– Heat the oil in a large skillet over medium heat.
– Drop spoonfuls of the zucchini batter into the skillet and flatten them gently with a spatula to form pancakes.
– Cook for about 3-4 minutes on each side, or until golden brown and cooked through.

4. **Serve:**
– Remove the pancakes from the skillet and place them on a plate lined with paper towels to drain any excess oil.
– Serve the savory zucchini pancakes hot, optionally with a dollop of sour cream or Greek yogurt.
