Granny Cake

Ingredients:

1 can crushed pineapples, including juice (20 ounces)
1.5 cups sugar
2 cups flour
2 eggs
1 cup brown sugar
1 cup chopped pecans
1 teaspoon baking soda
1/2 teaspoon salt

For the icing:
1/2 cup of unsalted butter
1 cup evaporated milk
1/2 cup brown sugar
1 teaspoon vanilla extract

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2. In a large mixing bowl, combine the crushed pineapples (with the juice) and 1.5 cups of sugar. Mix well until the sugar is dissolved.

3. Add the eggs to the pineapple mixture and beat until well combined.

4. In a separate bowl, whisk together the flour, baking soda, and salt.

5. Gradually add the dry ingredients to the pineapple mixture, mixing until the batter is smooth and well combined.

6. Pour the batter into the prepared baking pan, spreading it out evenly.

7. Top with layer of pecans and brown sugar.

8. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

9. While the cake is baking, prepare the icing. In a medium saucepan, melt the unsalted butter over medium heat.

10. Add the evaporated milk and 1/2 cup of sugar to the melted butter. Stirring constantly, bring the mixture to a boil. Reduce the heat and let it simmer for about 5 minutes, stirring occasionally.

11. Remove the saucepan from the heat and stir in the vanilla extract.

12. Once the cake is done baking, remove it from the oven and let it cool in the pan for a few minutes.

13. Pour the prepared icing over the warm cake, spreading it out evenly.

14. Allow the cake to cool completely before serving. The icing will set as the cake cools.
