Cheesy Hamburger Rice Casserole

Ingredients:
1 lb ground beef
1 cup long-grain rice (uncooked)
1 medium onion (chopped)
2 cups beef broth
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper (to taste)
1 cup frozen mixed vegetables (optional)
Fresh parsley (for garnish, optional)
Directions:
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a large skillet, brown the ground beef and chopped onion over medium heat until the meat is no longer pink. Drain excess fat.
Stir in the rice, beef broth, cream of mushroom soup, garlic powder, paprika, salt, and pepper. If using, add the frozen mixed vegetables.
Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
Transfer the mixture to the prepared baking dish and top with shredded cheddar cheese.
Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly.
