Pineapple and bread custard pudding

Ingredients:

  • 2 cups of pineapple (fresh or canned, cut into small chunks)
  • 6 slices of bread (white, whole wheat, or any bread of your choice)
  • 1 ½ cups of milk
  • 1/3 cup of sugar (adjust to taste)
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon (optional)
  • 1 tbsp butter (melted)
  • A pinch of salt
  • ½ cup of raisins or sultanas (optional)
  • A handful of chopped nuts (optional, such as cashews or almonds)

Instructions:

  1. Prepare the bread:
    • Cut the bread slices into small cubes or tear them into pieces. If using stale bread, it will absorb the custard mixture better.
  2. Prepare the custard mixture:
    • In a bowl, whisk together the eggs, sugar, and salt.
    • In a separate saucepan, heat the milk over low heat until warm, then pour it into the egg mixture slowly while whisking continuously to avoid curdling.
    • Add the vanilla extract and cinnamon (if using), and mix well.
  3. Assemble the pudding:
    • Grease a baking dish with a little butter or cooking spray.
    • Place the bread cubes into the baking dish, followed by the pineapple chunks. If you’re using raisins or nuts, you can sprinkle them in as well.
    • Pour the custard mixture over the bread and pineapple, making sure all the bread is soaked.
  4. Bake the pudding:
    • Preheat the oven to 350°F (175°C).
    • Bake the pudding for about 40-45 minutes, or until the custard is set and the top is golden brown. A knife or toothpick inserted into the center should come out clean.
  5. Serve:
    • Allow the pudding to cool for a few minutes before serving.
    • Serve it warm with a dollop of whipped cream, ice cream, or a drizzle of caramel sauce if desired.
