Creamy Cajun Salmon Penne with Spinach
Cajun-Spiced Salmon Penne in a Creamy Spinach Sauce
Ingredients:

300g penne pasta
2 salmon fillets, skinless
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
Salt and pepper to taste
1 tablespoon butter
3 garlic cloves, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped
1/2 teaspoon paprika for garnish (optional)
Directions:

Cook the penne pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
Season the salmon fillets with smoked paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and pepper.
Heat olive oil in a skillet over medium heat. Add the salmon and cook for 3-4 minutes per side until cooked through. Remove from the skillet and set aside.
In the same skillet, melt the butter and sauté the minced garlic for 1-2 minutes until fragrant.
Add the heavy cream to the skillet and stir, scraping up any browned bits from the bottom of the pan.
Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
Add the chopped spinach and let it wilt in the sauce for 1-2 minutes.
Toss the cooked penne pasta in the sauce until well coated.
Flake the salmon into bite-sized pieces and gently fold it into the pasta.
Garnish with paprika (optional) and serve warm.
