No-Bake Coconut Cream Balls

Here’s a simple no-bake coconut cream balls recipe that’s delicious and easy to make!

Ingredients:

  • 1 cup sweetened shredded coconut (plus extra for coating)
  • 1/2 cup coconut cream (not the solid coconut milk, but the creamy part of canned coconut milk)
  • 1/4 cup powdered sugar (or more, to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional, for extra flavor)
  • 1/4 cup chopped dark chocolate or chocolate chips (for dipping, optional)

Instructions:

  1. Mix Ingredients:
    In a medium-sized bowl, combine the shredded coconut, coconut cream, powdered sugar, vanilla extract, and almond extract (if using). Stir until everything is evenly mixed and a dough forms. The mixture should be moist but firm enough to hold its shape when rolled into balls.
  2. Form Balls:
    Scoop out about 1 tablespoon of the coconut mixture and roll it into a ball. Repeat with the rest of the mixture. If the dough is too sticky to handle, refrigerate for 10-15 minutes to firm it up a bit.
  3. Coat the Balls:
    Roll each ball in additional shredded coconut for a nice coating. You can gently press the coconut into the balls to ensure it sticks.
  4. Chill:
    Place the coconut balls on a parchment-lined baking sheet or tray. Refrigerate for at least 30 minutes to set.
  5. Optional Chocolate Dip:
    If you like, melt some dark chocolate and dip the coconut balls halfway into the chocolate for a rich coating. Place them back on the tray and refrigerate again until the chocolate sets.
