Honey-Glazed Roasted Brussels Sprouts with Bacon

Ingredients:

For the Brussels Sprouts:

  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bacon:

  • 6 slices thick-cut bacon, cut into 1-inch pieces

For the Glaze:

  • ¼ cup maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon red pepper flakes (optional)

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 425°F (220°C).
  1. Prepare Brussels Sprouts:
  • In a large bowl, toss the Brussels sprouts with olive oil, honey, salt, and black pepper. Spread them out on a baking sheet in a single layer.
  1. Cook Bacon:
  • Place the cut bacon pieces on a separate baking sheet, spreading them out evenly.
  1. Roast:
  • Roast the Brussels sprouts and bacon in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and caramelized, and the bacon is crispy.
  1. Make the Glaze:
  • In a small bowl, whisk together the maple syrup, Dijon mustard, balsamic vinegar, and red pepper flakes (if using).
  1. Combine and Serve:
  • Once the Brussels sprouts and bacon are done roasting, toss them together with the glaze in a large bowl. Serve immediately.
