Blackened Salmon Stuffed with Spinach & Parmesan
Ingredients:
- 4 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper, to taste
For the Filling:
- 2 cups fresh spinach, sautéed
- 1/2 cup shredded Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 clove garlic, minced
For the Sauce:
- 2 tablespoons unsalted butter
- 1 tablespoon lemon juice
Directions:
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub the spice mixture onto the salmon fillets.
- For the filling, combine the sautéed spinach, Parmesan cheese, mozzarella cheese, and minced garlic in a bowl. Mix well.
- Using a sharp knife, slice each salmon fillet horizontally to create a pocket, being careful not to cut through. Stuff the pocket with the spinach and cheese mixture.
- Heat olive oil in an oven-safe skillet over medium heat. Sear the salmon for 2-3 minutes per side until golden. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is fully cooked and flaky.
- Meanwhile, melt butter in a small saucepan and stir in lemon juice to create a simple sauce.
- Drizzle the butter sauce over the stuffed salmon and serve warm.
