Zucchini Pizza Bites

Here’s a simple and tasty recipe for Zucchini Pizza Bites:

Ingredients:

  • 2 medium zucchinis
  • 1/2 cup marinara sauce (or pizza sauce)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp dried oregano
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil spray (or 1-2 tbsp olive oil)
  • Optional toppings: pepperoni, sliced olives, mushrooms, etc.

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the zucchini:
  • Wash and dry the zucchinis. Cut off the ends and slice them into 1/2-inch thick rounds.
  • You can lightly salt the zucchini rounds and let them sit for 10 minutes to draw out excess moisture. Then, blot with a paper towel to dry.
  1. Arrange zucchini rounds:
  • Place the zucchini slices on the prepared baking sheet in a single layer.
  1. Add sauce:
  • Spoon a small amount of marinara sauce onto each zucchini slice, spreading it out evenly.
  1. Add cheese and seasonings:
  • Sprinkle shredded mozzarella cheese over each zucchini bite, followed by a little grated Parmesan.
  • Sprinkle with dried oregano, garlic powder, and a pinch of salt and pepper.
  1. Bake the pizza bites:
  • Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
  1. Optional toppings:
  • Add any extra toppings like pepperoni, olives, or mushrooms about 5 minutes before the zucchini bites are done.
  1. Serve:
  • Remove from the oven, let cool slightly, and serve warm.

Tips:

  • If you want a crispier base, you can pre-roast the zucchini slices for 5-7 minutes before adding the sauce and cheese.
  • These are great for a low-carb snack or appetizer!
