Garlic Butter Ranch Beef and Roasted Corn Bowtie Casserole

Ingredients:

  1. 1 lb ground beef
  2. 1 packet ranch seasoning mix
  3. 1 ½ cups uncooked bowtie pasta
  4. 1 cup roasted corn (fresh, frozen, or canned)
  5. 1 cup heavy cream
  6. 2 tbsp butter
  7. 1 cup shredded mozzarella cheese
  8. 1 cup shredded cheddar cheese
  9. 1 tbsp garlic powder

Directions:

  1. Preheat the Oven:
    1.1. Preheat your oven to 375°F (190°C).
  2. Brown the Beef:
    2.1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease.
  3. Season & Add Roasted Corn:
    3.1. Stir in the ranch seasoning mix, garlic powder, and roasted corn. Cook for 3-4 minutes until combined.
  4. Cook the Pasta:
    4.1. Cook the bowtie pasta according to package instructions. Drain and set aside.
  5. Prepare the Sauce:
    5.1. In a separate pan, melt the butter over medium heat. Add the heavy cream and bring to a simmer. Stir in ½ cup of shredded mozzarella and cheddar cheese until the sauce is creamy and smooth.
  6. Combine & Assemble:
    6.1. In a large mixing bowl, combine the cooked pasta, beef mixture, and creamy cheese sauce. Stir to coat evenly.
  7. Bake:
    7.1. Transfer the mixture to a greased baking dish. Top with the remaining mozzarella and cheddar cheese. Bake for 20-25 minutes or until the top is golden and bubbly.
  8. Serve:
    8.1. Let the casserole cool for a few minutes before serving. Enjoy this creamy, garlicky, cheesy delight!
