Baked Chicken Thighs

Here’s a classic, easy, and delicious recipe for Baked Chicken Thighs — juicy, flavorful, and perfect for a weeknight dinner or a hearty weekend meal.

Crispy Baked Chicken Thighs

Servings: 4–6 | Prep time: 10 min | Bake time: 35–45 min

🧂 Ingredients:

  • 6 bone-in, skin-on chicken thighs (about 2.5–3 lbs total)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (or regular paprika)
  • 1/2 tsp dried thyme (or Italian seasoning)
  • Optional: 1/4 tsp chili flakes or cayenne for a spicy kick
  • Fresh herbs (like rosemary or parsley), for garnish

Directions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment paper for easy cleanup, and set a wire rack on top if you want extra crisp skin.
  2. Pat the chicken thighs dry with paper towels. This is crucial for getting crispy skin.
  3. In a small bowl, mix the salt, pepper, garlic powder, onion powder, paprika, thyme, and any optional spice.
  4. Drizzle olive oil over the chicken thighs, then sprinkle the seasoning mix evenly over all sides. Rub it in gently with your hands to coat well.
  5. Arrange chicken thighs skin-side up on the baking sheet (or rack if using). Make sure they’re not touching so they roast properly.
  6. Bake for 35–45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy. If needed, broil for 2–3 minutes at the end for extra crispness (watch closely so they don’t burn).
  7. Rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Serving Suggestions:

  • Serve with mashed potatoes, roasted veggies, rice, or a crisp green salad.
  • Try drizzling with lemon juice or a touch of honey before serving for a flavor twist.
