For the Cheesecake Mixture:

  • 8 oz (1 package) cream cheese, softened
  • 1 (3.4 oz) box of instant cheesecake pudding mix (dry)
  • 1 cup heavy cream (or half & half or milk)
  • 1 tsp vanilla extract

For the Fruit:

  • 1 ½ cups strawberries, hulled and sliced
  • 1 cup pineapple chunks (fresh or drained canned)
  • 1 cup mandarin oranges, drained
  • 2 bananas, sliced
  • 1 ½ cups mini marshmallows (optional but fun)
  • ½ cup shredded coconut (optional)

Instructions:

  1. Make the Cheesecake Mixture:
    • In a large bowl, beat the softened cream cheese until smooth.
    • Add the dry cheesecake pudding mix, vanilla extract, and cream (or milk). Beat until combined and creamy. Set aside.
  2. Prepare the Fruit:
    • Wash and slice all fruit. Drain canned fruits well to avoid extra moisture.
  3. Combine:
    • Gently fold the fruit and mini marshmallows (and coconut, if using) into the cheesecake mixture. Stir until evenly coated.
  4. Chill (Optional):
    • Chill in the fridge for at least 1 hour for best flavor and texture.
  5. Serve:
    • Just before serving, add banana slices to keep them from browning early. Stir gently.
