🥔 Oven-Fried Potatoes & Onions

🕒 Prep Time: 15 mins

🔥 Cook Time: 40–50 mins

🍽️ Servings: 4–6

Ingredients

  • 4–5 medium russet or Yukon gold potatoes, scrubbed and cut into wedges or chunks
  • 1 large onion, sliced (yellow or sweet onion work best)
  • 3 tbsp olive oil (or vegetable oil)
  • 1 tsp garlic powder
  • 1 tsp paprika (optional for color and smokiness)
  • Salt and freshly ground black pepper to taste
  • Optional: chopped parsley for garnish

🔪 Instructions

1. Preheat the Oven

  • Set your oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper or foil for easier cleanup.

2. Prep the Veggies

  • Cut potatoes into wedges or bite-size chunks (keep sizes uniform for even cooking).
  • Slice the onion into strips or rings.

3. Season & Toss

  • In a large bowl, toss the potatoes and onions with olive oil, garlic powder, paprika, salt, and pepper until well coated.

4. Bake

  • Spread the mixture in a single layer on the baking sheet — don’t overcrowd!
  • Roast for 40–50 minutes, flipping once halfway through, until golden and crispy on the edges.
    • If you like them extra crispy, broil for 2–3 minutes at the end (watch closely).

Tips for Best Results

  • Soak potatoes in cold water for 30 minutes before baking to remove excess starch for crispier results (dry well before baking).
  • Add bell peppersgarlic cloves, or smoked sausage slices to turn it into a full meal.
  • Use cast iron or a preheated baking sheet for an extra-crispy bottom.

🍽️ Serving Ideas

  • Perfect alongside eggs for breakfast.
  • Great as a side with roast chicken, kielbasa, or burgers.
  • Top with cheese and bacon for loaded oven potatoes.
