Apple Cinnamon Streusel Loaf

Ingredients

For the Loaf:
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar (packed)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain Greek yogurt
  • 1 ½ cups peeled, finely chopped apples (Granny Smith or Honeycrisp work great)
For the Streusel Topping:
  • ⅓ cup all-purpose flour
  • ⅓ cup brown sugar (packed)
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg (optional)
  • 3 tbsp cold butter, cut into cubes

Instructions

  1. Preheat Oven
    Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper if desired.
  2. Make the Streusel
    In a small bowl, mix flour, brown sugar, cinnamon, and nutmeg. Cut in cold butter with a fork or pastry cutter until mixture is crumbly. Set aside.
  3. Make the Batter
    • In a medium bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
    • In a large bowl, beat butter, granulated sugar, and brown sugar until creamy.
    • Add eggs one at a time, beating well after each.
    • Mix in vanilla and sour cream.
    • Gradually add the dry ingredients to the wet, mixing until just combined.
    • Fold in chopped apples.
  4. Assemble the Loaf
    • Pour half the batter into the loaf pan.
    • Sprinkle half the streusel over the batter.
    • Add the remaining batter and smooth the top.
    • Finish with the remaining streusel on top.
  5. Bake
    Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil during the last 15 minutes.
  6. Cool and Serve
    Let the loaf cool in the pan for 10–15 minutes, then remove to a wire rack to cool completely. Slice and enjoy!
