Banana Bread Cake

Here’s a recipe for Banana Bread Cake with Cream Cheese Frosting:

Banana Bread Cake:

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup buttermilk (or regular milk with a tbsp of lemon juice or vinegar)
  • 1 cup chopped walnuts or chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, beat the butter and brown sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mash the bananas and add them to the wet mixture, mixing until combined.
  6. Add the flour mixture in three parts, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
  7. Fold in the walnuts or chocolate chips (if using).
  8. Pour the batter into the prepared pan and spread it evenly.
  9. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for about 10 minutes, then remove it from the pan to cool completely on a wire rack.

Cream Cheese Frosting:

Ingredients:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 3-4 cups powdered sugar, sifted (adjust for desired consistency)
  • Pinch of salt

Instructions:

  1. In a mixing bowl, beat the cream cheese and butter together until smooth and creamy.
  2. Add the vanilla extract and a pinch of salt, and beat until combined.
  3. Gradually add powdered sugar, one cup at a time, and mix until you reach a smooth, spreadable consistency.
  4. Once the banana bread cake has completely cooled, spread the frosting evenly over the top of the cake.
  5. Garnish with additional chopped nuts or a sprinkle of cinnamon if desired.
