Blackened Salmon Stuffed with Spinach & Parmesan
Ingredients:
- 4 salmon fillets (skinless, about 1.5 inches thick)
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (adjust for spice preference)
- 2 cups fresh spinach leaves
- 1 tablespoon butter
- 1/2 cup shredded Parmesan cheese
- 1/2 cup shredded mozzarella cheese
Directions:
- Preheat oven to 375°F (190°C).
- In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Slice each salmon fillet horizontally to create a pocket (be careful not to cut all the way through).
- Season both sides of the salmon and inside the pocket with the spice mixture.
- In a skillet, heat the butter over medium heat. Add spinach and cook until wilted, about 2 minutes. Remove from heat and mix in the Parmesan and mozzarella cheeses.
- Stuff each salmon fillet with the spinach and cheese mixture.
- In an oven-safe skillet, heat olive oil over medium-high heat. Sear the salmon for 2-3 minutes on each side until a crust forms.
- Transfer the skillet to the oven and bake for 8-10 minutes or until salmon is cooked through and cheese is melted.
