Blue Velvet Cake
A stunning blue cake layered with rich cream cheese frosting and fresh blueberries, perfect for special occasions!
Ingredients:
For the Cake:
1 3/4 cups all-purpose flour
2 tbsp natural cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter, softened
1 cup + 2 tbsp granulated sugar
2 large eggs
3/4 cup sour cream
1 1/2 tsp vanilla extract
1/2 tsp vinegar
1/2 cup buttermilk
1 tbsp blue food coloring
1/2 tsp violet food coloring
For the Frosting:
10 tbsp unsalted butter, softened
10 oz cream cheese, softened
1 1/2 tsp vanilla extract
1/4 tsp almond extract
5 cups powdered sugar
Fresh blueberries (for layering and decoration)
Directions:
Preheat the oven: Set to 350°F (175°C). Line and grease four 6-inch cake pans.
Mix Dry Ingredients: Whisk together flour, cocoa powder, baking powder, baking soda, and salt.
Cream the Butter and Sugar: Beat softened butter and sugar until light and fluffy. Add eggs one at a time.
Add Wet Ingredients: Mix in sour cream, vanilla extract, and vinegar.
Combine Dry and Wet Ingredients: Gradually add the dry mixture and buttermilk alternately. Stir in blue and violet food coloring.
Bake: Divide batter between pans and bake for 25-27 minutes. Let cakes cool.
Prepare Frosting: Beat butter, cream cheese, vanilla, and almond extract until smooth. Add powdered sugar gradually.
Assemble the Cake: Layer the cakes with frosting and blueberries. Frost the outside and decorate with extra blueberries.
