Cajun Salmon and Shrimp
Ingredients:
2 salmon fillets
1/2 lb shrimp, peeled and deveined
2 tbsp olive oil
2 tbsp Cajun seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1/4 tsp salt
1 lemon, sliced
2 tbsp butter
1/4 cup chopped parsley (optional)
Directions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, combine the Cajun seasoning, garlic powder, onion powder, black pepper, and salt.
Rub 1 tablespoon of olive oil over the salmon fillets and season both sides with half of the Cajun spice mixture. Place the salmon fillets on the prepared baking sheet.
Bake the salmon in the preheated oven for 12-15 minutes or until cooked through.
While the salmon is baking, heat the remaining olive oil in a skillet over medium heat. Add the shrimp and sprinkle with the remaining Cajun spice mixture. Cook for 2-3 minutes per side or until the shrimp are pink and fully cooked.
Remove the salmon from the oven and top each fillet with cooked shrimp.
Melt the butter in the skillet and squeeze in the juice of half a lemon. Drizzle the butter sauce over the salmon and shrimp.
Garnish with chopped parsley and lemon slices if desired. Serve warm.
