  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese (or more for extra cheesiness!)
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional, for a little spice)
  • 1 tablespoon lemon juice (optional, for added freshness)

Instructions:

  1. Cook the Corn:
  • Bring a large pot of water to a boil and add a pinch of salt.
  • Add the corn on the cob and cook for about 7-10 minutes, or until the corn is tender. You can also grill the corn if you prefer for a smokier flavor.
  • Once cooked, remove the corn from the water and set aside to cool slightly.
  1. Make the Garlic Butter:
  • In a small saucepan, melt the butter over medium heat.
  • Add the minced garlic to the melted butter and sauté for 1-2 minutes until fragrant, but not browned.
  • Remove from heat and stir in the red pepper flakes (if using) and lemon juice. Set aside.
  1. Coat the Corn:
  • Brush the cooked corn with the garlic butter mixture, making sure to coat it evenly.
  1. Cheesy Topping:
  • Sprinkle the corn with the grated Parmesan cheese and shredded mozzarella cheese while the butter is still warm, allowing it to melt slightly over the corn.
  1. Garnish & Serve:
  • Sprinkle the chopped fresh parsley over the top for a burst of color and freshness.
  • Season with salt and pepper to taste.
  1. Enjoy:
  • Serve immediately and enjoy the cheesy, buttery, garlicky goodness!
