Chilled Cucumber Tomato Salad
Ingredients:
For the dressing:
- 1/4 cup Olive Oil
- 2 Tablespoons Red Wine Vinegar
- 1 Tablespoon Sugar
- 3/4 teaspoon Salt
- 1/2 teaspoon ground Black Pepper
- 1/2 teaspoon Chili Flakes
- 1/2 cup Basil chopped and loosely packed
- 1/4 cup Parsley chopped and loosely packed
For the salad: - 4 cups Cherry or Grape Tomatoes halved
- 2 Cucumbers sliced
- 1 large Red Onion sliced
- Feta Cheese
Instructions:
- Whisk together all the ingredients for salad dressing. Salad dressings should be on the saltier side so that when they are added to the veggies, the flavors balance themselves.
- Add all the veggies to a large bowl, and toss well with the salad dressing. Refrigerate for at least an hour before serving. Mix again right before serving.
