Ingredients:

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 1 teaspoon chipotle powder (or chipotle chili in adobo sauce)
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Juice of 1 lime

For the Chipotle Sauce:

  • 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tablespoon chipotle chili in adobo sauce (or 1 tsp chipotle powder)
  • 1 tablespoon lime juice
  • 1 teaspoon honey or agave (optional for sweetness)
  • Salt and pepper to taste

For the Bowl:

  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup corn (fresh, frozen, or grilled)
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for garnish

Instructions:

  1. Prepare the Chipotle Sauce:
  • In a small bowl, mix together the mayonnaise, chipotle chili in adobo sauce, lime juice, and honey (if using). Season with salt and pepper to taste. Set aside.
  1. Prepare the Shrimp:
  • In a bowl, combine the olive oil, chipotle powder, paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss the shrimp in this spice mixture until evenly coated.
  • Heat a large skillet over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side, until the shrimp is pink and cooked through.
  • Squeeze fresh lime juice over the shrimp once they are done cooking.
  1. Assemble the Bowl:
  • Start with a base of cooked rice in each bowl.
  • Add the cooked shrimp on top.
  • Then add the corn, sliced avocado, cherry tomatoes, and red onion.
  • Drizzle the chipotle sauce over the shrimp and veggies.
  • Garnish with chopped cilantro and lime wedges on the side.
  1. Serve and Enjoy:
  • Serve your chipotle shrimp bowl with extra lime wedges and enjoy!

Tips:

  • For extra flavor, you can marinate the shrimp for 15-30 minutes before cooking in the chipotle seasoning.
  • Customization: You can add beans, grilled veggies, or even a scoop of salsa for added freshness.
  • Rice Alternatives: For a lighter version, use cauliflower rice or quinoa as the base.

This recipe is full of flavor and can be tailored to your preferences. Enjoy your Chipotle Shrimp Bowl!
