Ingredients:
For the Salad:
- 1 lb (450g) cooked shrimp, peeled and deveined
- 2 large cucumbers, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
For the Creamy Dressing:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions:
- Prepare the salad: In a large bowl, combine the shrimp, cucumbers, tomatoes, red onion, dill, and parsley.
- Make the dressing: In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, and garlic powder. Season with salt and pepper to taste.
- Combine and serve: Pour the dressing over the salad and toss gently to coat. Serve immediately or chill for later.
