Ingredients:

For the Meatloaf:

  • 1 1/2 pounds ground beef (or a mix of beef and pork)
  • 1 large egg
  • 1 cup bread crumbs (preferably plain or Italian)
  • 1 medium onion, finely chopped
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the French Onion Soup Mixture:

  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1 cup beef broth
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

For the Topping:

  • 1 1/2 cups Swiss cheese, shredded (or Gruyère for a more traditional French flavor)
  • Fresh parsley for garnish (optional)

Instructions:

1. Prepare the French Onion Soup Mixture:

  • In a large skillet, melt the butter over medium heat.
  • Add the sliced onions and sugar. Stir occasionally and cook until the onions are soft and caramelized, about 15-20 minutes.
  • Add beef broth, thyme, salt, and pepper. Stir to combine and cook for another 5 minutes until the broth reduces slightly. Remove from heat and set aside.

2. Make the Meatloaf:

  • In a large mixing bowl, combine the ground beef, egg, bread crumbs, chopped onion, milk, Worcestershire sauce, garlic powder, onion powder, thyme, salt, and pepper. Mix until well combined.
  • Form the meat mixture into a loaf shape that will fit comfortably in your Crockpot.

3. Cook the Meatloaf in the Crockpot:

  • Place the meatloaf into the Crockpot. Pour the prepared French onion mixture over the top of the meatloaf.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the meatloaf is cooked through (internal temperature should reach 160°F/71°C).

4. Add the Cheese:

  • About 15 minutes before serving, sprinkle the shredded Swiss cheese over the top of the meatloaf and allow it to melt.

5. Serve:

  • Carefully remove the meatloaf from the Crockpot. Slice and serve with the melted Swiss cheese and the caramelized onion mixture.
  • Garnish with chopped fresh parsley, if desired.

Tips:

  • For extra flavor, you can top the meatloaf with a bit of extra Worcestershire sauce before serving.
  • Serve with mashed potatoes or a side of roasted vegetables for a complete meal.

Enjoy your comforting and savory Crockpot French Onion Meatloaf with melted Swiss cheese!
