  • 1 cup crushed buttery crackers (or old-fashioned oats)
  • 1 small onion, finely chopped
  • 1/2 cup whole milk
  • 2 eggs
  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
For the glaze:
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard (or a little more for tang)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. In a large bowl, combine all the meatloaf ingredients. Mix gently with hands or a spoon until just combined—don’t overmix.
  3. Transfer the meat mixture into the prepared loaf pan. Shape it evenly.
  4. In a small bowl, mix the glaze ingredients. Spread half over the top of the meatloaf.
  5. Bake uncovered for 45 minutes. Then, spread the remaining glaze on top and bake an additional 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Let rest for 10 minutes before slicing. Enjoy!

Tips:

  • You can substitute crushed saltines, Ritz, or oats based on your preference.
  • Want a sweeter glaze? Add a bit more brown sugar.
  • Leftovers are great in sandwiches!
