Ingredients:
2 cups all-purpose flour
2 cups sugar
1 tsp baking soda
2 large eggs
1 tsp vanilla extract
1 (20 oz) can crushed pineapple (with juice)
1/2 cup chopped walnuts (optional)
For the Cream Cheese Frosting:
8 oz cream cheese (softened)
1/2 cup unsalted butter (softened)
3 cups powdered sugar
1 tsp vanilla extract
1/2 cup crushed pineapple (drained, optional for extra pineapple flavor)
Directions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
Make the Batter: In a large bowl, combine the flour, sugar, and baking soda. Add the eggs, vanilla extract, and the entire can of crushed pineapple (including juice). Stir until just combined—no need for a mixer! If using, fold in the chopped walnuts.
Bake: Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan.
Prepare the Frosting: In a medium bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy. For an extra pineapple twist, fold in the drained crushed pineapple.
Frost the Cake: Once the cake is completely cool, spread the cream cheese frosting evenly over the top. Garnish with extra walnuts or a sprinkle of coconut if desired.
This Hawaiian Pineapple Cake is a tropical dream come true—moist, sweet, and tangy with every bite! Perfect for picnics, potlucks, or when you just want a taste of the islands. HawaiianPineappleCake
