Heavenly Blueberry Cheesecake Bars
Ingredients:
1 cup all-purpose flour
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
1/4 teaspoon salt
2 cups fresh blueberries
1/2 cup blueberry jam
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1/4 cup blueberry yogurt
1 tablespoon lemon juice
Blue sugar sprinkles for garnish
Directions:
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a bowl, mix together the flour, melted butter, granulated sugar, and salt until a dough forms. Press the dough evenly into the bottom of the prepared pan.
Bake the crust for 15-18 minutes, or until lightly golden. Remove from the oven and let it cool completely.
Spread the blueberry jam over the cooled crust, then top with fresh blueberries.
In a mixing bowl, beat the cream cheese, powdered sugar, vanilla extract, blueberry yogurt, and lemon juice until smooth and creamy.
Spread the cream cheese mixture over the blueberry layer. Smooth the top with a spatula.
Chill in the refrigerator for at least 2 hours, or until set.
Before serving, sprinkle blue sugar sprinkles on top for garnish. Cut into bars and enjoy!
