Hobo Dinner Foil Packets

Ingredients:

For Each Packet:

  • 1/2 lb (225 g) ground beef (or ground turkey/chicken)
  • 1 small potato, peeled and cut into 1/2-inch cubes
  • 1/2 cup baby carrots, halved or sliced
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme (or rosemary)
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 tablespoon soy sauce (optional, for added flavor)

For Garnish (optional):

  • Chopped fresh parsley

Instructions:

  • Preheat Oven or Grill:
    • If using an oven, preheat to 400°F (200°C). For grilling, prepare the grill to medium-high heat.
  • Prepare the Foil Packets:
    • Cut large sheets of aluminum foil (about 12-18 inches) and lay them flat on a work surface.
    • In a large bowl, combine the ground beef with minced garlic, dried thyme, paprika, salt, and black pepper. Mix until well combined but do not overwork the meat.
  • Assemble the Packets:
    • Place an equal portion of the seasoned ground beef in the center of each foil sheet.
    • Top the beef with cubed potatoes, baby carrots, corn, and diced onion.
    • Drizzle with olive oil and, if desired, add a splash of soy sauce for extra flavor.
    • Fold the sides of the foil over the ingredients and crimp the edges to seal tightly, creating a packet. Make sure the packets are well-sealed to prevent juices from escaping during cooking.
  • Cook the Packets:
    • Oven Method: Place the foil packets on a baking sheet and bake for 30-40 minutes, or until the potatoes are tender and the beef is cooked through. Cooking time may vary depending on the thickness of the meat and vegetables.
    • Grill Method: Place the foil packets on the grill over indirect heat. Close the grill lid and cook for 30-40 minutes, or until the potatoes are tender and the beef is fully cooked. Turn the packets occasionally for even cooking.
  • Serve:
    • Carefully open the foil packets, as steam will escape. Check for doneness and adjust seasoning if needed.
    • Garnish with chopped fresh parsley if desired and serve directly from the foil packets for a rustic presentation.
