Homemade Pastry Cream
Ingredients:
1 vanilla pod
4 egg yolks
200 g of sugar
1 liter of milk
100 g of flour
Preparation:
✅m Preheat the milk over medium heat without boiling it and add the split vanilla bean to infuse.
In a separate bowl, vigorously whisk the egg yolks with the sugar until the mixture turns white and foamy.
Incorporate the sifted flour into the egg yolk mixture to obtain a smooth texture.
Gradually pour the warm vanilla milk over the egg mixture while continuing to whip to mix well.
Put the whole thing back in the pan and cook over low heat, stirring constantly until the cream thickens and begins to bubble slightly.
Remove from heat immediately after boiling to prevent the cream from burning.
