Ingredients:

For the Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup honey
  • 1/2 cup finely chopped fresh peaches (or canned peaches, drained and chopped)
  • 1/4 cup buttermilk (or milk)

For the Honey Peach Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 2 tbsp finely chopped peaches (optional for extra flavor)
  • A pinch of salt

Instructions:

For the Cupcakes:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Mix dry ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and cream cheese: In a large mixing bowl, cream together the butter, cream cheese, and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs and flavor: Add eggs one at a time, beating well after each addition. Stir in vanilla extract and honey.
  5. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients in batches, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined.
  6. Fold in peaches: Gently fold in the chopped peaches.
  7. Bake: Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool: Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

For the Honey Peach Cream Cheese Frosting:

  1. Cream together: Beat the cream cheese and butter together until smooth and fluffy.
  2. Add honey and vanilla: Mix in the honey and vanilla extract.
  3. Add powdered sugar: Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add a pinch of salt to balance the sweetness.
  4. Optional peach addition: If you’d like a peachy texture, fold in the finely chopped peaches. If you prefer a smoother frosting, skip this step.
  5. Frost the cupcakes: Once the cupcakes have cooled, spread the frosting generously over each one using a knife or piping bag.

Serve and Enjoy!

These cupcakes are best enjoyed fresh but can be stored in an airtight container in the fridge for a few days. The honey and peaches give them a delicious sweetness, and the cream cheese frosting adds a tangy, smooth finish.
