Ingredients:

• 1 pound boudin sausage (casing removed)
• 1 cup shredded cheddar cheese (optional, for extra cheesiness)
• 1 cup all-purpose flour (for dredging)
• 2 large eggs, beaten
• 2-3 cups crushed hot chips (like Flamin’ Hot Cheetos, Hot Doritos, or any spicy chips)
• Vegetable oil (for frying)

Instructions:

  1. Prepare the Boudin Mixture: • Remove the boudin sausage from its casing and place it in a mixing bowl.
    • If you want extra cheesiness, mix in the shredded cheddar cheese until evenly combined.
    • Form the mixture into small balls, about 1-2 tablespoons per ball. Set the boudin balls on a baking sheet lined with parchment paper.
  2. Freeze the Balls: • Freeze the boudin balls for about 30 minutes. This helps them hold their shape during the dredging and frying process.
  3. Prepare the Coating: • Crush the hot chips in a food processor or place them in a resealable bag and use a rolling pin to crush them into fine crumbs.
    • Set up a dredging station with three bowls:
    • Bowl 1: All-purpose flour.
    • Bowl 2: Beaten eggs.
    • Bowl 3: Crushed hot chips.
  4. Bread the Boudin Balls: • Roll each boudin ball in the flour to coat, then dip it into the beaten eggs, and finally roll it in the crushed hot chips, pressing the crumbs gently to ensure they stick well.
  5. Fry the Balls: • Heat vegetable oil in a deep frying pan or pot to 350°F (175°C).
    • Fry the boudin balls in batches until they are crispy and golden brown on the outside, about 3-4 minutes.
    • Remove with a slotted spoon and place the fried boudin balls on a paper towel-lined plate to drain excess oil.
  6. Serve: • Serve hot with your favorite dipping sauce (ranch, remoulade, or hot sauce) for an extra punch of flavor.
