Longhorn Steakhouse’s Parmesan Crusted Chicken

Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup Italian-style breadcrumbs
1/2 cup all-purpose flour
2 large eggs
2 tablespoons unsalted butter, melted
1 tablespoon olive oil
Salt and pepper to taste
For the Garlic Butter Sauce:
4 tablespoons unsalted butter, melted
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon grated Parmesan cheese
1 teaspoon lemon juice
Salt and pepper to taste

Instructions:
Prepare the Chicken:
Preheat your oven to 375°F (190°C) .
Season the chicken breasts with salt and pepper on both sides .
In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, and a pinch of salt .
In another dish, lightly beat the eggs .
Dredge each chicken breast in flour, then dip into the beaten eggs, and finally coat with the Parmesan-breadcrumb mixture, pressing gently to ensure the coating sticks .
Cook the Chicken:
Heat olive oil and 2 tablespoons of melted butter in a large oven-safe skillet over medium heat .
Once the skillet is hot, add the breaded chicken breasts and cook for about 3-4 minutes per side, until golden brown .
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) .
Make the Garlic Butter Sauce:
While the chicken is baking, combine the melted butter, minced garlic, chopped parsley, grated Parmesan, lemon juice, and a pinch of salt and pepper in a small bowl.
Stir until the sauce is smooth and fragrant.
Serve:
Once the chicken is done, remove it from the oven and drizzle with the garlic butter sauce .
Serve the Parmesan crusted chicken with your favorite side dishes, like mashed potatoes or roasted vegetables.
