Ingredients:

  • 4 slices of sourdough or whole wheat bread
  • 4 oz feta cheese, crumbled
  • 4 oz mozzarella cheese, shredded
  • 2 tbsp olive tapenade (store-bought or homemade)
  • 1/2 cup roasted red peppers, sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1 tbsp fresh basil, chopped (or oregano)
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 small tomato, sliced
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Sandwich Filling:
  • In a small bowl, mix the crumbled feta cheese and shredded mozzarella. Add the chopped basil (or oregano), roasted red peppers, Kalamata olives, and a pinch of salt and pepper. Stir to combine.
