Mediterranean Salmon Patties
Crispy, flavorful salmon patties packed with Mediterranean herbs and feta—perfect for a light and delicious meal!
Ingredients
For the Patties:
2 cans (6 oz each) salmon, drained and flaked
1 cup fresh spinach, finely chopped (or ½ cup thawed, drained frozen spinach)
¼ cup red onion, finely chopped
2 cloves garlic, minced
⅓ cup feta cheese, crumbled
½ cup breadcrumbs (panko or regular)
2 large eggs, beaten
2 tbsp fresh parsley, chopped
1 tbsp fresh dill (optional)
1 tbsp lemon juice
1 tsp lemon zest
1 tsp dried oregano
Salt and pepper, to taste
For Frying:
Olive oil
Optional Garnish:
Lemon wedges
Tzatziki sauce
Instructions
- Prepare the Salmon
Drain the salmon and remove any bones or skin if desired. Flake it with a fork in a large bowl. - Sauté the Spinach
Cook spinach in a dry pan over medium heat for 2 minutes until wilted. Let it cool, then squeeze out excess moisture. - Mix Everything
Add spinach, red onion, garlic, feta, breadcrumbs, eggs, parsley, dill, lemon juice, zest, oregano, salt, and pepper to the salmon. Mix well. - Shape the Patties
Form the mixture into 6–8 patties, about 3 inches wide. - Cook Until Golden
Heat olive oil in a pan over medium heat. Cook patties for 3–4 minutes per side until crispy and golden brown. Drain on paper towels. - Serve
Enjoy with lemon wedges, tzatziki sauce, or a fresh salad!
