Nun’s Puffs

Here are a few Nun’s Puffs recipes—a classic French-style pastry (also called Pets de Nonne) that’s light, airy, and delicious:


1. Traditional Nun’s Puffs (Baked Version)

Ingredients:

  • ½ cup (1 stick) unsalted butter
  • 1 cup milk
  • ¾ cup all-purpose flour
  • 3 large eggs
  • 1 tbsp sugar (optional)
  • Pinch of salt
  • Powdered sugar (for dusting)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease muffin tins.
  2. In a saucepan, heat butter and milk until boiling.
  3. Add flour all at once and stir vigorously until mixture pulls away from the pan sides (about 1–2 minutes).
  4. Remove from heat; cool slightly (5 minutes).
  5. Beat in eggs one at a time until smooth and glossy.
  6. Spoon into muffin tins (fill about halfway).
  7. Bake 30–35 minutes until golden and puffed.
  8. Dust with powdered sugar before serving.

2. Fried Nun’s Puffs (French Pets de Nonne)

Ingredients:

  • ½ cup water
  • ¼ cup butter
  • 1 tbsp sugar
  • Pinch of salt
  • ½ cup flour
  • 2 eggs
  • Oil for frying
  • Powdered sugar or cinnamon sugar (for topping)

Instructions:

  1. In a saucepan, combine water, butter, sugar, and salt; bring to a boil.
  2. Add flour, stirring until it forms a dough ball.
  3. Remove from heat; cool slightly.
  4. Beat in eggs one at a time until smooth.
  5. Heat oil in a pan (about 350°F / 175°C).
  6. Drop small spoonfuls of dough into oil (they will puff and float).
  7. Fry until golden brown (about 2–3 minutes), turning as needed.
  8. Drain on paper towels and dust with powdered sugar.
