Old-fashioned Egg Flan

Ingredients:

  • 6 eggs
  • 100g of powdered sugar
  • 1 litre of whole milk
  • 1 vanilla bean (or vanilla extract)
  • Liquid caramel for the mould

Instructions:

  1. Preheat your oven to 180°C (thermostat 6).
  2. In a saucepan, heat the milk with the split and scraped vanilla pod (or vanilla extract) until it is warm.
  3. Meanwhile, in a bowl, whisk the eggs with the powdered sugar until the mixture turns white.
  4. Gradually pour the warm milk over the egg-sugar mixture while whisking.
  5. Pour liquid caramel into the bottom of a flan mould.
  6. Gently pour the mixture into the mould.
  7. Place the flan mould in a larger baking dish filled with hot water to half-height (water bath).
  8. Put in the oven and cook for about 45 minutes to 1 hour, until the flan is taken and golden on top.
  9. Allow to cool completely before unmoulding and refrigerating for at least 2 hours before serving.
