Old-fashioned Egg Flan
Ingredients:
- 6 eggs
- 100g of powdered sugar
- 1 litre of whole milk
- 1 vanilla bean (or vanilla extract)
- Liquid caramel for the mould
Instructions:
- Preheat your oven to 180°C (thermostat 6).
- In a saucepan, heat the milk with the split and scraped vanilla pod (or vanilla extract) until it is warm.
- Meanwhile, in a bowl, whisk the eggs with the powdered sugar until the mixture turns white.
- Gradually pour the warm milk over the egg-sugar mixture while whisking.
- Pour liquid caramel into the bottom of a flan mould.
- Gently pour the mixture into the mould.
- Place the flan mould in a larger baking dish filled with hot water to half-height (water bath).
- Put in the oven and cook for about 45 minutes to 1 hour, until the flan is taken and golden on top.
- Allow to cool completely before unmoulding and refrigerating for at least 2 hours before serving.
