Here’s a simple yet hearty recipe for Pinto Beans, Green Chile, and Beef Soup:

Ingredients:

  • 1 lb ground beef (you can use lean ground beef or stew meat, depending on your preference)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth (or water with beef bouillon cubes)
  • 2 cups pinto beans, soaked overnight and drained (or use canned, drained)
  • 1 can (4 oz) diced green chilies
  • 2 large tomatoes, diced (or 1 can diced tomatoes)
  • 2 medium potatoes, peeled and diced (optional for a heartier soup)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • 2 tbsp olive oil (for sautéing)
  • 1/4 cup fresh cilantro, chopped (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions:

  1. Prepare the Beans:
  • If using dry pinto beans, soak them overnight. Drain before using.
  • If using canned beans, simply drain and rinse them.
  1. Cook the Ground Beef:
  • In a large soup pot, heat the olive oil over medium-high heat.
  • Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  1. Sauté the Vegetables:
  • Add the diced onion and garlic to the pot with the beef. Sauté for about 3-5 minutes until softened and fragrant.
