Here’s a simple yet hearty recipe for Pinto Beans, Green Chile, and Beef Soup:
Ingredients:
- 1 lb ground beef (you can use lean ground beef or stew meat, depending on your preference)
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth (or water with beef bouillon cubes)
- 2 cups pinto beans, soaked overnight and drained (or use canned, drained)
- 1 can (4 oz) diced green chilies
- 2 large tomatoes, diced (or 1 can diced tomatoes)
- 2 medium potatoes, peeled and diced (optional for a heartier soup)
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika (optional)
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 2 tbsp olive oil (for sautéing)
- 1/4 cup fresh cilantro, chopped (optional, for garnish)
- Lime wedges (optional, for serving)
Instructions:
- Prepare the Beans:
- If using dry pinto beans, soak them overnight. Drain before using.
- If using canned beans, simply drain and rinse them.
- Cook the Ground Beef:
- In a large soup pot, heat the olive oil over medium-high heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
- Sauté the Vegetables:
- Add the diced onion and garlic to the pot with the beef. Sauté for about 3-5 minutes until softened and fragrant.
- Add the Broth and Spices:
- Pour in the beef broth (or water with bouillon cubes), then add the cumin, chili powder, smoked paprika (if using), oregano, and a pinch of salt and pepper.
- Stir well to combine the spices with the broth.
- Add the Beans, Green Chile, and Tomatoes:
- Add the soaked pinto beans, green chilies, and diced tomatoes to the pot.
- Bring the soup to a boil, then lower the heat and let it simmer for about 45 minutes to 1 hour, or until the beans are tender. (If using canned beans, simmer for about 30 minutes to blend the flavors.)
- Optional Add-ins:
- If using potatoes, add them about 20 minutes before the soup finishes cooking, and cook until tender.
- Final Seasoning:
- Taste and adjust seasoning with more salt, pepper, or chili powder if necessary.
- Serve:
- Ladle the soup into bowls and top with chopped cilantro and a squeeze of lime juice if desired.
- Serve with cornbread or tortilla chips for extra comfort!
