You won’t believe how easy these Rhubarb Custard Bars are to make! They’re the perfect way to celebrate the rhubarb season!
- Rhubarb Custard Bars
Ingredients:
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1 cup milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 tablespoon butter, melted
Directions:
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a medium bowl, toss the chopped rhubarb with 1/4 cup of sugar and set aside.
- In a large mixing bowl, whisk together the remaining sugar, flour, milk, eggs, vanilla extract, salt, and baking powder until smooth.
- Pour the batter into the prepared baking dish and evenly distribute the rhubarb on top.
- Drizzle the melted butter over the rhubarb.
- Bake for 35-40 minutes, or until the custard is set and the top is lightly golden.
- Let cool before slicing into bars.
