Savory Cabbage Beef Bake

Ingredients:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 small head of cabbage (about 6 cups), chopped
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1/4 cup tomato paste or ketchup
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tbsp olive oil or butter

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cook the beef mixture:
    • In a large skillet, heat a bit of oil over medium heat.
    • Add ground beef and cook until browned. Drain excess fat if needed.
    • Add chopped onion and cook 3–4 minutes until softened.
    • Stir in garlic and cook 1 more minute.
  3. Add tomatoes and spices:
    • Stir in diced tomatoes, tomato paste, thyme, paprika, salt, and pepper.
    • Let simmer 5–10 minutes to blend flavors.
  4. Prepare the cabbage:
    • While the meat simmers, in another large pan or pot, sauté chopped cabbage in olive oil or butter over medium-high heat until slightly wilted (about 5–7 minutes). It doesn’t need to be fully soft – it’ll cook more in the oven.
  5. Assemble the bake:
    • In a 9×13-inch baking dish, layer half the cabbage, then half the beef mixture. Repeat with remaining cabbage and beef.
    • If using, sprinkle shredded cheese evenly over the top.
    • Optional: add breadcrumbs for a crunchy topping.
  6. Bake:
    • Cover with foil and bake for 25 minutes.
    • Uncover and bake an additional 10–15 minutes, or until hot and bubbly and cheese is melted.
  7. Serve:
    • Let rest for 5 minutes before serving. Great with crusty bread or a green salad!
