🥔 Slow Cooker Creamy Potato Bacon Soup

Ingredients:

  • 6–7 medium russet potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • carrot, finely chopped (optional for added depth)
  • 1/2 tsp dried thyme
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 6–8 slices bacon, cooked and crumbled (save a little for topping)
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter (optional, for richness)
  • Optional garnish: sliced green onions, extra cheese, bacon bits

Instructions:

  1. Prep ingredients: Peel and dice potatoes. Cook and crumble bacon (reserve some for garnish).
  2. Add to slow cooker: In a 6-quart crockpot, add potatoes, onion, garlic, carrot (if using), thyme, salt, pepper, and chicken broth.
  3. Cook:
    • On Low for 6–8 hours
    • Or on High for 4–5 hours
      Until potatoes are tender.
  4. Mash or blend: Once cooked, use a potato masher for a chunky texture, or an immersion blender for a smoother soup (optional).
  5. Stir in cream, cheese, butter, and bacon: Mix until melted and smooth. Let cook on Low for another 15–20 minutes.
