Southern Breakfast Enchiladas With Sausage Gravy

A delightful breakfast dish combining savory sausage gravy, scrambled eggs, and cheese rolled in tortillas for a hearty start to your day.

Ingredients :

1 lb ground sausage.
1/2 cup onion diced.
1 jalapeno minced.
1/3 cup all-purpose flour.
2 3/4 cups milk.
1/4 tsp salt.
1/4 tsp pepper.
10 large eggs.
2 tbsp butter.
2 cups cooked tater tots.
1 cup shredded Pepper Jack cheese.
1 cup shredded cheddar cheese.
10 flour tortillas.

Instructions :

In a large nonstick skillet, cook sausage over medium-high heat until crumbled and halfway done.
Add diced onion and minced jalapeno to the skillet and continue cooking.
Spoon out 1 cup of the mixture and set aside.
Return the skillet to heat, sprinkle with flour, and stir for a minute.
Slowly whisk in the milk, allowing the mixture to thicken. Remove from heat.
Preheat oven to 350°F and lightly grease a baking dish.
In a pan, melt butter and scramble eggs; season with salt. Remove eggs slightly before being fully cooked.
Mix 1 cup of reserved sausage mixture with tater tots, scrambled eggs, and half of each cheese type.
Place 1/2 cup of filling in the center of each tortilla, roll, and place seam-side down in the dish.
Pour sausage gravy over enchiladas and top with remaining cheese.
Bake for 30 to 40 minutes until cheese is melted and bubbly.
