Here’s a delicious recipe for Sweet Alabama Pecan Bread!

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 2 cups mashed ripe bananas (about 4 large bananas)
  • 1 cup chopped pecans (preferably toasted for extra flavor)
  • 1/2 cup brown sugar (optional, for extra sweetness)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal of the bread later.
  2. Toast the pecans (optional): In a dry skillet over medium heat, toast the pecans until fragrant (about 5-7 minutes). Keep an eye on them to avoid burning. Once done, chop them into smaller pieces.
  3. Mix the dry ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, cinnamon, and salt.
  4. Cream the butter and sugar: In another bowl, cream together the softened butter and granulated sugar until light and fluffy. You can use a hand mixer or beat with a whisk for 2-3 minutes.
  5. Add eggs and vanilla: Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Add the vanilla extract and mix.
  6. Combine wet and dry ingredients: Slowly alternate adding the dry flour mixture and the buttermilk to the wet mixture. Start with the dry ingredients and finish with the dry ingredients. Mix until just combined.
  7. Add bananas and pecans: Gently fold in the mashed bananas and chopped pecans. If you’re using brown sugar, add it here as well for an extra layer of sweetness.
  8. Pour into pan and bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, or until a toothpick or knife inserted into the center comes out clean.
  9. Cool and serve: Let the bread cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
